First woman in the United States to be awarded three Michelin stars, one of the five starred-chefs in the world to manage one of the 50 best restaurants on the planet.
The one of Dominique Crenn, chef and co-owner of the three-Michelin-starred restaurant Atelier Crenn, is a story of records and success achieved with genuine talent and pure love for cuisine. A story, among other things, of a female chef ruling in a field represented and managed mainly by men.
Dominique Crenn ambassador of Plastic Free Certification
Plastic Free Certification meets Atelier Crenn in 2019, in the pre-Covid era.
Its reality, together with that of Bar Crenn and Petit Crenn, is a culinary microcosm sticking out for sustainability: they were the first restaurant trying to remove animal meats produced by intensive breeding from the menu and to replace them with cultivated and clean meats. They grow crops at the Crenn home farm, the Bleu Belle Farm, bring the locally grown fruits to the table and use waste as compost for the soil.
Later, the time of removing single-use plastics throughout the supply chain came.
Plastic Free Certification accompanied Atelier Crenn in the discovery of new materials and feasible alternatives to polluting plastics, introducing the Plastic Free Standard and the importance of tracking one’s own efforts towards the target of sustainable consumption habits.
Covid-19 interrupted and slowed down many projects, though it acted as an incubator for the work with Atelier Crenn. Good things in the end were not long in coming.
In November 2021 Atelier Crenn got certified as the first plastic free restaurant in the United States and Dominique Crenn was awarded as a Plastic Free Certification ambassador, for the constant commitment in the fight against waste and polluting plastics and the beneficial action of Crenn’s establishment in terms of spreading concepts of responsible consumption and elimination of single-use plastics.
“As a true commitment to protect our planet, we have recently become certified as a Plastic Free establishment. This means that we have removed single-use plastics from our restaurant and we are the first restaurant in the United States to do so. It has been an honor to work with Plastic Free Certification and we pledge to be ambassadors for this movement”.
